Coconut milk is an opaque milky white liquid extracted from the grated flesh of mature coconuts. It has a rich naturally sweet and slightly nutty flavor and is widely used in curries soups and dairy free desserts across Southeast Asia India and the Caribbean.

1. Light Coconut Milk
   Typically contains 5 percent to 7 percent fat.
2. Standard or Full Fat Coconut Milk
   Typically contains 17 percent to 24 percent fat providing a thick and creamy consistency ideal for curries and sauces.
3. pH Level
   The standard pH generally ranges from 5.9 to 6.5 depending on fat content and any added stabilizers.
4. Total Solids
   Full fat coconut milk contains a minimum of 12.7 percent to 25.3 percent total solids.
5. Taste and Odor
   Has a characteristic fresh coconut flavor that is naturally sweet and slightly nutty with no rancid odor.
